French Toast Bake

Happy Father’s Day Weekend!  In honor of Father’s Day, I’m sharing a recipe for something that all dads love…

🙂 BREAKFAST 🙂

What dad doesn’t love having breakfast made for him, especially when it is something as yummy as this sweet breakfast casserole?

There are several great things about this recipe…

  1. It’s yummy and filling.
  2. You prep it the night before, so all you have to do in the morning is put it in the oven to bake.
  3. You can use bread that has been sitting  around in your pantry for a few days or take advantage of your supermarket’s day-old rack.  See one of my older posts Frugal Friday – Food Budget Saver #2  for tips on finding day-old bread.
  4. This dish would be great for a breakfast potluck!
  5. And finally, your family will think that you are a culinary genius after they try it!

Here’s how easy it is and remember to be creative, use any kind of bread that you would love for French Toast…

French Toast Bake

Ingredients:

  • 1 loaf bread (French bread works great, but all kinds of bread would be yummy)
  • 6 eggs
  • 2 cups milk
  • 3/4 cup half-and-half
  • 1/4-1/2 cup sugar
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon

Topping:

  • 1/2 cup packed brown sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon
  • 3 tablespoons butter
  • 1 cup chopped pecans (walnuts would be great too)

Prep Directions:

  • Spray a 13×9 inch baking pan with cooking spray.
  • Cube or tear bread into smaller pieces and place in baking pan.
  • Whisk together eggs, milk, half-and-half, sugar, vanilla and cinnamon.  Pour over bread.  Cover and refrigerate overnight or for at least 2 hours.
  • In a small bowl, stir together brown sugar, flour and cinnamon.  Cut butter into small chunks and add into sugar mixture with a pastry blender or two forks until mixture is the consistency of small crumbs.  Cover and refrigerate.IMG_6035

Baking Directions:

  • Preheat oven to 350 degrees.
  • Remove bread pan and sugar mixture from refrigerator.
  • Sprinkle sugar mixture and pecans on top of bread and cover with foil.
  • Bake for 20 minutes, remove foil and bake for an additional 20-30 minutes or until baked through.

*Serve with syrup if desired, but pour sparingly.  This dish is “sweet enough” on it’s own 🙂
