Coconut Almond Waffles

I’m sharing a recipe today that combines two of my favorite flavors together.  Coconut and almond.  Yum!!

These waffles are great for a weekend breakfast, but you can also indulge during the week if you make a few extra on the weekend.  I always make extras and freeze them for later use.  You can either microwave them or just pop them in the toaster.

You get “double” the coconut flavor in these waffles if you top them with toasted coconut.  In case you’ve never toasted coconut, it is one of the easiest things to do in the kitchen and it always adds great flavor and makes any dish look prettier and tastier.  Just heat a small non-stick pan over low heat, add your desired amount of coconut and stir frequently as the coconut toasts.  It will burn quickly, so be sure to keep an eye on it.  That’s it! 🙂

These would be great for dessert with some ice cream on top…just sayin’. 🙂

Coconut Almond Waffles

Ingredients:

  • 1 3/4 cups flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/2 cup butter, melted
  • 1 1/2 cups milk
  • 2 teaspoons almond extract
  • 1 teaspoon coconut extract
  • toasted coconut

Directions:

  • Mix all ingredients and cook in waffle maker for 3 1/2-4 minutes.
