Chocolate-Mint Flax Browffins

IMG_5076Yes!  The title says “browffins”.

“What is a browffin?”, you ask.  Well, I’ll explain…

A browffin is a cross between a brownie and a muffin.  How did I come up with a browffin?  I’ll be honest…I didn’t intend to have browffins at the end of the baking time.  They were supposed to be muffins, but they came out denser like brownies.  So there, we have a browffin. 🙂

So, how did they come out denser if I followed the recipe to the letter?  Well, I didn’t follow to the letter…I did my usual…I made some adjustments.  I was using a regular chocolate muffin recipe but I wanted to add some flax seed (love the stuff) and some mint extract so that they would be a little bit healthier and minty as well.

Sounded like a good plan to me…well…my adjustment definitely made a difference in the end result.  As I pulled the browffins out of the oven, I thought I had a failure on my hands.  Oh well, with experimentation, occasionally comes failure .  Better to try and fail than to never try. 🙂

As I was reminding myself of this, I had a realization.  These “failed muffins” smelled absolutely delicious!!  And they were completely done…so I may as well give one a try.  It couldn’t hurt.  The worst that could happen is that it wouldn’t taste good.  Well…

It tasted wonderfully yummy!!  I couldn’t believe it.  I was all set to try to figure out where I went wrong…until I tried it and had my boys’ try it.  The consensus is to leave my recipe alone and not change a thing.  So, we have a new dessert in our family…the browffin.

Here’s the recipe to my “failure” in case you would like to give it a try…

Chocolate-Mint Flax Browffins


  • 1 1/4 cups flour
  • 1/4 cup milled flax seed
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/3 cup canola oil
  • 1 egg
  • 1/2 teaspoon mint extract


  • Preheat oven to 400 degrees and line muffin pan with paper liners.
  • Sift together flour, flax seed, cocoa powder, sugar, baking powder and salt in small bowl.
  • In large bowl, whisk together milk, canola oil, egg and mint extract.
  • Stir flour mixture into milk mixture until just combined.
  • Fill muffin cups 2/3 full.
  • Bake for 16-18 minutes.IMG_5068

Makes 9 browffins.
